Serves 8
1 tsp of extra virgin olive oil
1 small onion, diced
¼ cup red wine vinegar
1 tbsp fresh ground pepper
2 tsp smoked paprika
2 cups of fat-free chicken broth
2 pounds collards, turnips, mustard greens, chopped
4 ounces skinless shredded smoked
turkey breast
Sea salt to taste
In a large sauté pan heated to medium, add the olive
oil. Add onions, and cook till translucent. Pour in vinegar, black pepper, smoked
paprika and chicken broth and reduce. Add chopped greens, toss and allow to wilt
and cook till tender. Sprinkle with a little sea salt.
